Horrible play on words, I apologize (sorta.) I visited the Tompkins Square Farmer’s Market on Sunday and picked up some local cheese and veggies, including three giant beets. I’d been thinking about this amazing beet and dill infused vodka that I’d had at newly opened Night of Joy a couple of months ago, so I thought I’d give it a go. I swear I’ve never consumed as many beets as I have in the year I’ve been living in New York. They’re delicious! They taste like candy dirt.
Beet + Dill Infused VodkaGlass jar1 large beet1 cup dill Decent vodka (I used Reyka)Wash beet and peel. Slice thin and pile into mason jar, layering with dill and fill the remainder with vodka. Close tightly and store in a cool place for a few days. Strain out beets and dill and serve cold.
Ah yes, the taste test.
This is definitely something to sip on, like a nice scotch. It still retains a vodka flavor, but it’s dulled with the earthy beet/dill combo. Also, don’t spill, cause it’ll stain everything pink. Oops.
